中式蛋餅

有時到晚上才突然想起: 啊∼今天忘了做麵包, 於是利用家用現成材料,快速備好麵糊(只要5分鐘)再放進冰箱,隔天早上就可以直接煎蛋餅囉!

[i]內餡[/i]
蔥花適量
蛋1顆
培根適量
鹽少許

[i]麵皮[/i]
高筋麵粉80g
低筋麵粉40g
玉米粉20g
雞蛋1顆
水265g
鹽1/8小匙

前晚先將麵皮的所有材料攪拌均勻 並放進冰箱(如果當天要吃 在室溫放30分鐘即可)

早上將麵糊從冰箱取出,倒少許油至鍋中,用湯匙慢慢將麵糊倒入平底鍋中成圓餅狀,表面有點結皮後,翻面續煎

煎至金黃色即可起鍋

把自已喜歡的材料(我用蔥花和培根)先和雞蛋攪拌圴勻。倒入少許油進鍋裡,將混合好的蛋汁倒入鍋中煎

馬上將蛋餅皮鋪在蛋上(蛋未熟的狀態下)

再煎1∼2分鐘後,慢慢捲起成長條狀

切開即可,重口味的可以和醬油膏一起搭著吃
